The antibiotic-free pigs roam freely on Niman Ranch in Iowa.
It's no longer just foodies at farm markets or Whole Foods buying antibiotic-free, pasture-raised meats.
Increased demand is coming from lots of big players, including Hyatt Hotels; institutional food providers such as Bon Appetit Management Co., which caters to schools and companies; and the fast-food chain Chipotle Mexican Grill. And it's changing the game.
In fact, this year, Chipotle, which is growing so quickly that it's opening about three new locations each week, will slowly braise and sell about 120 million pounds of naturally raised pork, chicken and beef that meets its antibiotic-free standards.

The company's transition to antibiotic-free meat began more than a decade ago when Chipotle realized its pork wasn't selling very well. And Steve Ells, the founder, wanted to make some changes.
He stumbled upon an article called "The Lost Taste of Pork" in The Art of Eating, a boutiquey, food-lover's journal, which detailed the practices of Paul Willis, a family farmer in Iowa. Willis raises pigs on pasture, the old-fashioned way. At the time, Willis' methods were a radical departure from the large, industrial operations that confine pigs indoors and feed them regular doses of antibiotics.
In the article, published back in 1999, writer Edward Behr described a thick pork chop he'd eaten at Chez Panisse in Berkeley that came from a pig raised on the Iowa farm. "It was the best pork I'd ever eaten ? tender and somewhat fatty," he wrote. Ells was intrigued.
Ells ordered some pork from Willis, who had teamed up with Niman Ranch in Iowa, and Chipotle's customers responded: Despite a jump in price from $4.50 to $5.50 for a carnitas burrito, sales improved.
"We started selling twice as many carnitas as we had been before," Chipotle's Chris Arnold told me. He acknowledged that it's hard to know whether people truly detected a big difference, or if the in-store marketing about the switch to all-natural, antibiotic-free pigs caught people's attention. Either way, it set Chipotle on a new course.
I reached out to Willis, the farmer in Iowa who gave Chipotle its first taste of free-range pigs a decade ago, to ask how the natural-pork business is changing.
To be sure, antibiotic-free meat still makes up a tiny share of the market. Economists estimate it's around 2 percent. But demand is growing.
"The marketplace for what we do has increased dramatically," he says. When he began working with Niman Ranch, which operates a bit like a co-op, he was the only pork farmer. Now there are hundreds.
"I'm proud that we've created a market for people who want to raise livestock this way," Willis told me.
And increasingly, consumers seem to be making the connections about what they eat. Concerns about antibiotic resistance in humans have led the Food and Drug Administration to issue voluntary guidelines that recommend limiting the use of antibiotics in livestock animals.
As consumer awareness has grown, Chef Greg Lopez of Hyatt Hotels says people are showing that they're willing to pay more for food that they perceive to be more healthful.
"I think we're at that groundswell moment, at that tipping point right now," he says.
Lopez says this month Hyatt announced it will offer antibiotic-free, naturally raised meat, poulty and dairy options at all of its hotels. The chain decided to expand these options, in part, after it saw the success of a natural burger on the menu. Meyer Natural Angus supplies those burgers.
"When they [consumers] were given a choice between just burger, and burger that was naturally raised and hormone-free, 30 percent paid a premium, a couple of bucks" to get the antibiotic-free option, Lopez says.
The list of retailers making changes is expanding. Wal-Mart sells a number of antibiotic-free beef and poultry products.
And as demand grows some farmers and suppliers are scrambling to adjust.
One sign of growing pains ? temporary hiccups in the supply chain. Hyatt's Lopez says just this week his favorite all-natural chicken supplier ? Palouse Pastured Poultry ? told him it is temporarily sold out. "I'm in a dry spell," Lopez says. "Their next slaughter is scheduled for the last week of June or the first week of July."
Lopez says the good news is that there are more farmers ramping up this kind of production, so he'll be able to buy antibiotic-free chickens from another farm this month.
As for Behr, and the contribution of his "Lost Taste of Pork" article that helped chart a new course for Chipotle, I called him up to ask him about it.
"This is the one huge piece of good I've done through writing about food," he said with a laugh. "The one, huge, thing!"

NASHVILLE, Tenn. (AP) ? County music singer Randy Travis is accusing his ex-wife of divulging confidential information about him in order to damage his reputation and career.
The accusations were made in a countersuit he filed this month against his ex-wife in a federal court in Nashville.
The court documents don't say what information Elizabeth Travis is alleged to have betrayed. The filings include a copy of an August 2011 letter sent to the ex-wife by one of the singer's lawyers demanding that she "cease and desist from discussing Mr. Travis' personal and/or business affairs with third parties."
He is also accusing his ex-wife, who had been his longtime business manager, of overbilling for reimbursement for travel and other expenses.
An attorney for Elizabeth Travis did not immediately respond to a request for comment.
The countersuit is the latest salvo in the ongoing feud between the Travises. The couple divorced in 2010 after 19 years of marriage. Elizabeth Travis had been his manager for more than three decades and continued to work with him after they divorced.
She sued him last month claiming that Randy Travis made it impossible for her to do her job and terminated her management contract without proper written notice. She claimed that her ex-husband sent several men, including an armed guard, to clean out her offices on Music Row of items and records linked to Randy Travis.
A publicist for the singer did not immediately respond to a message seeking comment.
Randy Travis says in his countersuit that his ex-wife "completely destroyed the requisite degree of trust" that should exist between an artist and his personal manager. The singer wants a court to declare that his ex-wife breached her contract and to bar her from receiving any management commissions. He is also seeking attorney fees.

How was your long, holiday weekend? Ours was super busy. We've got alot to share! Mr. Jansson and I both got off work early on Friday afternoon. We grabbed lunch before coming home, packing up and driving to Whidbey Island for two days of camping with family.
Overall we had a good time. The weather was a little chilly (especially at night) but it was sunny!? I hurt my lower back last week and wasn't too pumped about sleeping on the ground but Mr. Jansson saved the day by ordering a new self inflating air mattress from amazon.? It came in time for our trip and was a lifesaver!?
Speaking of Mr. Jansson, he fixed a wonderful supper on Saturday night - clams cooked in butter and white wine for an appetizer and then for supper he cooked steak, lobster tail and roasted veggies. Delish and all done over the campfire!
Some of y'all might be wondering how Watson fared. He had a ton of fun riding in the car but didn't like having to wear his harness or being one of three dogs at our campsite. You see, he thinks he's top dog and is a big bully (no pun intended) when it comes to other pups. He instigated a few scuffles with our in law's dog and Mr. Jansson's aunt & uncle's dog. He wasn't seriously injured - mostly noise and some superficial scratches.? He's definitely a spoiled only child.
We drove back home on Sunday afternoon and did a ton of laundry and cleaned up the house in preparation for a bbq we're having at our home on Saturday. (I hope the weather clears up!)

E3 ligase's role makes it target for defeating Herceptin resistance, stifling cancer's preferred diet
HOUSTON HER2 and its epidermal growth factor receptor cousins mobilize a specialized protein to activate a major player in cancer development and sugar metabolism, scientists report in the May 25 issue of Cell.
This chain of events, the scientists found, promotes Herceptin resistance in breast cancer and activation of glucose metabolism (glycolysis), which cancer cells primarily rely on to fuel their growth and survive.
Their research focused on Skp2 E3 ligase, a protein that binds to and tags other proteins with molecules called ubiquitins, in this case to activate the Akt kinase.
"We discovered a novel function of Skp2 E3 ligase that makes it an important player in cancer development and also identified a crucial role for it as a regulator of the glycolysis pathway," said senior author Hui-Kuan Lin, Ph.D., associate professor in MD Anderson's Department of Molecular and Cellular Oncology.
"This is potentially important for understanding and addressing Herceptin resistance in breast cancer," Lin said. "The effect on glucose metabolism also could have implications for other types of solid tumor cancers, including prostate, because they rely so heavily on glycolysis."
The team also found that Skp2 overexpression is associated with poor prognosis for breast cancer patients and its spread to other organs.
Lin and colleagues are studying potential inhibitors of Skp2 that might be developed for treatment.
The EGFR family of proteins includes HER2, which abundantly coats cancer cells in about a third of breast cancers, making these tumors prime targets for the targeted drug Herceptin.
Fundamental discovery about Akt activation
The Akt kinase relays signals by growth factors from outside of the cell into the cell. It regulates cell profliferation and survival, metabolism and tumor development, the authors noted.
To do its work, whether normal or oncogenic signaling, it must move from the cytosol to the plasma membrane. To do that, Lin and colleagues had previously shown that Akt must be ubiquitinated and those ubiquitins must be attached in a specific chain formation, the K63-linked polyubiquitin chains.
That earlier finding involved the insulin-like growth factor receptor (IGF-1) and a different E3 ligase. "Finding that the epidermal growth factor receptors also ubiquitinate Akt, and that they do so through the Skp2 E3 ligase, was quite unexpected," Lin said.
Finding two paths to ubiquitination implies that there might be more, Lin said.
Regulating cancer's energy engine
Tumor cells evolve to rely mainly on glucose processing to generate energy, grow and thrive. They increase glucose uptake and glycolysis, a process that doesn't involve oxygen and occurs in the cell's cytosol. Non-cancerous cells rely more heavily on oxygen-based metabolism of fatty acids and other nutrients in the cell's mitochondria. This difference is called the Warburg Effect.
In a series of experiments, the researchers blocked Skp2 expression and found:
Suppression of glucose uptake and glycolysis in breast cancer cell lines.
Reduction of tumor size and glucose uptake in a mouse model of HER2-expressing breast cancer.
Steep declines in the expression of glucose-transporter Glut1. Cells with Skp2 produced more Glut1 when induced by epidermal growth factor signaling. Akt activates Glut1.
Reduced Akt activation, Glut1 expression and tumor growth plus extended survival in mice genetically engineered to develop breast cancer and metastasis.
Poor prognosis, Herceptin resistance
The team analyzed 213 cases of breast cancer treated with modified radical mastectomy but no chemotherapy or radiation. Of these, 80 were HER2-positive. In these tumors Skp2 expression was correlated with:
Adverse prognostic factors such as cancer stage, primary tumor status and lymph node metastasis.
Increased activation of Akt.
A multivariable analyses of prognostic factors showed Skp2 overexpression to be a significant factor affecting metastasis-free survival for HER2-positive breast cancer patients.
No prognostic role was found for Skp2 expression among patients with HER2-negative disease.
HER2-positive breast cancer patients can develop resistance to Herceptin treatment, the researchers noted, and some encounter this problem right at the start.
Knocking down Skp2 made cancer cell lines more susceptible to Herceptin, stifling cancer proliferation. In another mouse model, Herceptin by itself inhibited tumor growth but did not shrink tumors. With Skp2 inhibited, Herceptin treatment caused the tumors to nearly vanish in 22 days.
This sensitivity was blocked when the scientists overexpressed Akt in Skp2-silenced cancer cells.
Overall, the team's findings indicate that blocking Skp2 might inhibit glycolysis and that targeting glycolysis could be an important approach to cancer treatment, Lin said.
